The cacao beans for the Raw Cacao Powder Criollo – Ceremonial Grade are grown in the Peruvian Amazon, the spiritual home of cacao. Long before they shared its secrets with the outside world, locals enjoyed cocoa, and Peru and cocoa have an intertwined history.
Almost all cocoa in Peru is grown by small-scale holders who rely on a weekly harvest (April – September) as their main source of income. Their crop is sold to cooperatives that act as middlemen.
Criollo cacao is known for its relatively mild and refined flavor profile. Depending on origin and processing, fruity, nutty, caramel-like, and slightly spicy notes may be present. The beans are often used for cacao and chocolate where flavor and origin are key.
